This is a simple recipe that I created to help me drink more green tea for my metabolism, and rooibos to aid digestion.
It’s caffeine-free and low in calories and sugar.
It doesn’t have that strong tea-taste of traditional iced tea. It’s light and refreshing, and I’m loving it as part of my exclusion diet (I’m halfway through – just three weeks to go!).
Tweak the sweetness with a teaspoon or two of maple syrup if desired. For a stronger taste, you could add more tea leaves at the beginning, and/or fresh, bruised mint leaves to serve.
- 1 tbsp green tea leaves
- 3 tbsps rooibos (redbush) tea leaves
- 1 orange (unwaxed)
- 1 tbsp honey (local/organic)
- 5 litres water (filtered)
Zest the orange, and slice into thin rounds.
Place your tea leaves, orange zest and honey in a heat-proof jug, (such as a glass measuring jug).
Boil 500ml of the water and pour over the tea leaves. Leave to steep for 15 minutes.
Add the orange slices to a large glass container that can be made airtight, such as a clip-top drinks dispenser with a tap. If you don't have one of these, distribute evenly across several containers with wide openings.
Pour the steeped tea through a tea strainer onto your oranges.
Allow to cool completely, then close the lid and refrigerate the container(s).
Leave the orange slices in the tea, and keep for up to three days in the fridge (it will intensify in flavour).
Release the clip-top before pouring through the tap, or strain over ice into a clear glasses to serve. Add maple syrup if you want more sweetness, and some fresh mint leaves, if you like.
